Strawberry Spring Salad

Lately I’ve been trying to eat healthier; salads are a quick, easy meal that have made their way into my regular routine. The strawberries in my garden are sprouting and have me excited, but they’re not nearly ready to pick. While I typically try to hold out for my own produce, I decided to buy strawberries at my local grocery early this season. Long story short- I’m glad I did because the strawberry salad I’ve been making is fantastic!

Here’s what you’ll need to toss this easy and delicious spring salad together:

Did I mention I make a homemade lemon honey salad dressing to go with it?

INGREDIENTS:

Salad:
1 head Romaine Lettuce, cleaned & chopped
2 1/2 cups Strawberries
Feta Cheese, crumbled & sprinkled to your liking
2 Avocados, diced and dipped in lemon juice
1/4 cup Red Onion, chopped
Candied Pecans

Lemon Honey Salad Dressing:
1/2 cup Extra Virgin Olive Oil
4 tablespoons Lemon Juice
3 tablespoons Honey
Sea Salt
Ground Black Pepper

Combine all ingredients in a large bowl. Make lemon honey salad dressing: shake olive oil, lemon juice and honey in a jar. Season with salt and pepper. Gently toss dressing with salad and serve chilled.

A glass of chilled white wine or rosé pairs perfectly with this salad. If you’re looking for lighter options, this is definitely a must try! It’s crisp and refreshing- a little tart, but balanced with a sweet notes. Give it a try and let me know what you think!
